This is our second summer on the farm. When we moved, we never had the chance to discover EVERYTHING that twenty-six beautiful acres could potentially hold.

Eden Ridge keeps surprising us with an ever wonderful bounty of treasures tucked away in all areas of the farm. Let’s just say, we haven’t been the least bit disappointed in our findings.

The month of May brought about one particular fabulous find that I was completely giddy about!

One of these “tucked away” treasures really wasn’t at all tucked away! Practically in plain sight – we were just preoccupied with getting moved in and working on some very urgent fixes on the farmhouse we didn’t pay too close attention. Once those immediate fixes were taking care of, we went hog wild with the outdoors! Knowing the rest of the ongoing house projects could be set aside, while we focused on planning and planting the market garden and orchards.

We were even able to get our Elderberry bushes planted!

While working in the gardens one day, I happened to look out a little ways, along the edge of our gardens I saw a very GIGANTIC bush with its gorgeous blooms in their full glory.

Sure enough! It was a an overgrown wild Elderberry bush!!!

Since that day in May, we have found dozens and dozens of wild elderberry bushes on our property. I suppose when all the bushes begin fruiting, along with the wild ones, we will be having elderberry everything!

Elderberry Health Benefits

According to USDA National Nutrient Database, elderberries are packed with nutrients including minerals like ironpotassiumphosphorus, and copper, as well as vitamins, such as vitamins A, B, and C, as well as proteins and dietary fiber.

Elderberries have a VAST array of health benefits and we’re so excited our farm will be able to offer you and your family even more good for you products.
