Best eaten raw or only slightly cooked. The natural juices allow these naturally sweet onions to cook rapidly, so they should be used to enhance foods where they can be quickly sauteed or grilled.
STORAGE TIPS
Choose a dark, cool, and dry space with ideal temperatures between 40°F and 55°F. Make sure your onions have good airflow. Use mesh bags or paper bags with holes, wire baskets, or an open cardboard box or basket so air can circulate freely. Avoid sealing whole onions in plastic bags, which trap moisture and cause rotting. **Keep onions away from potatoes. Potatoes release moisture and gases that make onions spoil and sprout faster.
For raw cut onions, tightly wrap them and refrigerated to be used within a few days. For freezing, you can chop onion and place in a freezer bag. Onions in the freezer can last of to 12 months before they lose flavor.
