STORAGE TIPS
Store unwashed fresh bean pods in a plastic bag kept in the refrigerator crisper. Whole beans stored this way should keep for about 7-10 days. If you plan to use them in an upcoming meal, wash them under running water. Remove both ends of the beans by either snapping them off or cutting them with a knife. If you end up having leftovers, you can put the green bean dish back in the fridge, but you’ll only be able to eat it for another 3-4 days.

Freezing tip: you can blanch in boiling water for several minutes, and then allow them to cool. Then place in a resealable plastic freezer bag. for up to 8 to 10 months.

Farmers wife tip: wash green beans thoroughly. Pat dry, and place on cookie sheet and flash freeze. Once frozen place in plastic freezer bag
for up to 8 to 10 months.

HOW TO USE
Dragon Tongues are delicious simply steamed and tossed with butter or olive oil and cracked pepper and sea salt, or you can step it up a notch and blanch, then sauté with an accompanying flavor such as a bit of garlic or shallot. Combining these show-stopping beans with buttery potatoes, steamed and cooled, then tossed in mustard vinaigrette is mmm-mmm good! Or make pickled green beans to prolong your enjoyment of this luscious bean variety.

Cooked Dragon’s Tongue beans fade during cooking, and work just as perfectly in any green bean recipe.
